These Grilled Caprese Sandwiches are great to have for lunch. I used basil, tomatoes, pesto and some delicious vegan mozzarella cheese. The vegan butter on the outside gave it a nice, crusty taste. And the pesto gave it a nice kick.
Grilled Caprese Sandwich
Sourdough bread, sliced
Vegan mozzarella cheese, sliced
Roma tomatoes, sliced
Pesto, store brought or you can prepare it
1 Cup of balsamic vinegar
1 Teaspoon of sugar free maple syrup or organic sugar
-Bring the vinegar and sugar free maple syrup or organic sugar to a simmer in a small pot over medium heat until reduced by 1/2. Do not boil, turn to medium low, then set aside to cool.
-Spread the pesto on both pieces of sourdough bread. Add basil, sliced tomatoes, and vegan mozzarella cheese to the bread. You can spread a little vegan butter on the outside of each side of the sandwich.
-Heat a skillet and add the sandwich to the pan. You can add a little more vegan butter if desired. Grill until golden on both sides. Serve and enjoy!
