Greek Spaghetti Salad is a favorite Mediterranean dish made from vegan feta cheese, brown rice pasta, Kalamata olives, green pepper, and sun dried tomatoes. This authentic Greek Salad is topped with a delicious vinaigrette dressing.
Greek Spaghetti Salad
10 ounces of brown rice spaghetti pasta
1/2 Cup of Kalamata olives, halved and pitted
1/3 Cup of red onions, chopped
1 English Cucumber, quartered
1 1/2 Cup of sun dried tomatoes, halved
1/2 Package of vegan feta cheese, cubed, (8 ounces)
1/4 Cup of basil, chopped
1/2 cup of olive olive
1/4 Cup of red wine vinegar
2 Tablespoons of fresh lemon juice
2 Teaspoons of Dijon mustard
1 Clove of garlic, minced
1/2 Teaspoon of Italian seasoning
1/4 Teaspoon of Himalayan salt
1/4 Teaspoon of pepper
-Prepare brown rice spaghetti pasta according to directions on packaging.
-Chop the Kalamata olives, red onion, cucumber, sun dried tomatoes and feta cheese then set aside.
-Add all dressing ingredients to a small bowl and whisk to combine.
-Once the pasta is cooked, drain then cool down. If it sticks a little, add a little olive oil and toss gently.
-In a medium pot add pasta, vegetables, and vinaigrette dressing. Toss to combine. Serve and enjoy!
