Greek Pizza

This Greek Pizza is absolutely delicious and it’s easy to make.  Some key ingredients included sautéed spinach, onions and minced garlic, along with artichoke hearts, Kalamata olives, grape tomatoes and vegan feta cheese.  I made a delicious Tahini dressing to drizzle on top.  It was full of flavor and incredibly tasty.  Leave a comment below if you make this pizza!

Greek Pizza


Ingredients:
-9 in Prepared pizza crust, Banza ( I prepared two pizza crusts for ingredients)
1 Teaspoon of olive oil
1/2 White onion, chopped
2/3 Zucchini, chopped in quarters
2 Cloves of garlic, minced
1/2 Cup of tomato sauce
5 Ounces fresh baby spinach, chopped
1 Cup of vegan feta cheese, chopped
1 Cup of cherry tomatoes, sliced lengthwise
4 Pepperoncini peppers, sliced
2 to 3 artichoke hearts, chopped
2 Tablespoons of basil, chopped
1/3 Cup of Kalamata olives, chopped

Lemon Tahini Dressing:
1 Cup of tahini
1/2 Cup of water
1/2 Cup of lemon juice
1 Tablespoon Dijon mustard
1 Tablespoon of onion powder
1/2 Teaspoon of Himalayan salt
1/4 Cup of basil, chopped

Directions:
-Combine the tahini, 1/2 Cup of water, lemon juice, mustard, onion powder and Himalayan salt in a food processor on high. If it’s really thick you can add a little more water, a tablespoon at a time. Refrigerate until ready to use.

Directions:
-Preheat your oven to 450F.
-Heat the olive oil in a pan over medium heat then add onion and cook until translucent for about 5 minutes. Add minced garlic and sauté for about a minute. Then add chopped spinach and cook for a few minutes until the spinach wilts.
-Add the tomato sauce to the crust then top with onion and spinach mixture. Layer the rest of the ingredients and sprinkle vegan cheese.
-Put pizza into the oven for 10-12 minutes or according to the directions on packaging. Remove from the oven and drizzle with tahini dressing and slice and enjoy!
