Gluten Free Pizza Pasta is spicy and delicious, and made using brown rice penne pasta, pizza sauce, onion, and nutritional yeast to give it a cheesy taste.
Gluten-free Pizza Pasta
Ingredients:
2/3 Cup of red onion, chopped
1 Red pepper, chopped
1 Clove of garlic, minced
1/3 Cup of sliced black olives
1 Large zucchini, quartered
1 12 oz. box of brown rice penne pasta
2 Cups of pizza sauce
2 Tablespoons of nutritional yeast or vegan Parmesan cheese
1 Tablespoon of Italian seasoning
Himalayan salt and pepper to taste
1-2 Tablespoons of olive oil
1 Package of beyond meat crumbles
Garnish with fresh basil, chopped
Directions:
-Prepare pasta accordingly to directions on packaging.
-In a cast iron skillet, add 1 tablespoon of olive oil, chopped onions, red pepper and minced garlic. Sauté over medium heat until translucent about 5 minutes, then add quartered zucchini. -Sauté for another 5 minutes or until soften.
-Add the plant based crumbles to the pan then cook accordingly to directions on packaging. Add pizzas sauce, black olive’s, nutritional yeast and seasoning.
-Drain cooked pasta then add to the skillet with sautéed vegetables and plant based crumbles. Stir to combine. Cook for 1 minute then serve with other toppings. Enjoy!
