Try making these tasty Fruit Popsicles on those hot summer days.  They are made using an assortment of fruits like strawberries, blueberries and peaches, and they are really quick and easy to make!



Fruit Popsicles

Strawberry and Peach Layer:
1 ½ cup of strawberries, fresh or frozen
1-2 peaches, sliced and pitted, skin removed
1 tablespoon of agave
1 teaspoon of lemon juice

Blueberry Layer:
1 ½ cup of blueberries, fresh or frozen
¼ cup of water
1 tablespoon of coconut sugar

-In a cast iron skillet, add the blueberries, 1 tablespoon of coconut sugar and ¼ cup of water.  Cook for 5 to 10 minutes then mash fruit as it cooks into preserves.  Set aside to cool.
-In a blender, add the peaches, strawberries, agave, coconut yogurt and lemon juice.  Blend until combined.  Add 1 to 2 tablespoons of water if the smoothie is too thick.
-In a popsicle tray add 1 – 2 tablespoons of the strawberry and peach layer into the bottom of the popsicle mold, then add 1 tablespoon of the blueberry layer, repeat the process until the molds are just about full – filling to the top line.  Use a toothpick or knife to swirl each popsicle as desired.  Add the top to the mold and insert the popsicle sticks.
-Place the filled popsicle mold into the freezer overnight until frozen.
-Remove the popsicle mold from the freezer and place the bottom of the molds in some warm water for a minute or two to remove the popsicles.  Enjoy!
