Feta Dip with Marinated Vegetables is a tasty dip that’s easy to make. Key ingredients like marinated grape tomatoes and cucumbers, combined with the vegan feta cheese, made for an absolutely delicious dip! I served mine with some warm and crusty, sliced baguette bread.
Feta Dip with Marinated Vegetables
Ingredients:
Feta Dip:
1 tablespoons of olive oil
1 teaspoon of lemon zest
1 tablespoon of almond milk
1 cucumber, sliced (leave skin on)
1 pint of tomatoes, halved
2 tablespoons of olive oil, (as needed to thin dip)
Himalayan salt and pepper
Toasted Baguette:
1 gluten-free baguette bread, sliced
4 Tablespoons of vegan butter, or as needed
Directions:
-Slice cherry tomatoes and cucumbers, add to a medium size bowl with olive oil and Italian seasoning. Combine ingredients. Set aside.
-Preheat the oven to 400F degrees and line a baking sheet with parchment paper. Add sliced baguette bread, then add vegan butter lightly on both sides. Bake for 5 to 7 minutes until golden. Add the crumbled vegan feta cheese, nondairy yogurt, olive oil, almond milk and lemon zest to a food processor. Process for 2-3 minutes then add black pepper and Himalayan salt to the mixture and process for an additional 3 minutes or until smooth.
-Add the feta dip to a serving dish then top with marinated vegetables . Garnish with fresh basil. Serve with toasted baguette bread. Enjoy!
