Eggplant Potato Gnocchi in a Zesty Marinara Sauce

Eggplant Potato Gnocchi in a Zesty Marinara Sauce is great for lunch or dinner.  This dish is made using potato gnocchi, sautéed eggplant, onion and garlic, green olives and marinara sauce.


Eggplant Potato Gnocchi

2 Cloves of garlic
1 Tablespoons of olive oil
1 Small white onion, chopped
1 Medium eggplant, into 3.4 inch cubes
1 Tablespoon of Italian seasoning
2 Tablespoons of nutritional yeast
1 25 oz. Jar of marinara sauce
1/2 Cup of green olives
12 oz Package of potato gnocchi
1/2 Teaspoon of red pepper flakes

Prepare potato gnocchi accordingly to directions on packaging.
-In a cast iron skillet heat the olive oil over medium heat then sauté onions and eggplant for about 8 to 10 minutes. Then add marinara sauce, olives, nutritional yeast, red pepper flakes, Italian seasoning and gnocchi. Cover and reduce heat to low and simmer for 20 minutes until eggplant is tender. Serve and enjoy!
