Edamame Salad

Edamame Salad is a healthy and delicious salad that tastes great and is quick and easy to make.  You will not believe how good it is with ingredients like edamame, red pepper, red onion, vegan feta cheese, and artisan romaine lettuce.  I drizzled a tasty vinaigrette dressing over the salad.

 


 

Edamame Salad

Ingredients:
1 Head of Romaine Lettuce
1 Zucchini, quartered
12 oz. of shelled edamame, (1 1/2 Cups)
1 Cup of red pepper, chopped
8 oz. of vegan feta cheese, cubed
1/2 red onion, sliced
2 Tablespoons of fresh basil, chopped
Sprinkle of Himalayan salt and pepper
Directions:
-Cook edamame according to directions on packaging.
-Prepare the vegetables by shelling the edamame, quarter zucchini, chop pepper and slice red onion. Then cut the vegan feta cheese into cubes.
-In a large bowl add all the ingredients then add the vinaigrette dressing. Toss gently until combined. Serve and enjoy!
