Delicious Lemon Bars

Breakfast, Dessert, Gluten-Free

Since spring is in the air – try making these light and delicious Lemon Bars for dessert.  They have a tasty Graham cracker crust and a lemony filling.

 


 

Delicious Lemon Bars

Ingredients:
Crust:
1 1/2 Cups of gluten-free graham cracker crumbs, about 10 sheets
1/4 Cup of coconut sugar
7 Tablespoons of vegan butter, melted
Filling:
8 oz. of vegan cream cheese
1 14 oz. can of coconut cream
2 tablespoons of lemon zest
1/3 cup of fresh lemon juice
1/3 cup of sugar free maple syrup
1/8 teaspoon of Himalayan salt
Topping:
Nondairy Whipped Topping
Lemon zest
Directions:
Preheat the oven to 350F.
-Crust: Crush the gluten-free graham crackers in a food processor into crumbs. You can also put the graham crackers in a zip lock bag and crush them with a rolling pin.
-In a medium size bowl, add the graham cracker crumbs, coconut sugar and melted vegan butter, stir until the mixture resembles sand. -Press mixture into a square silicone pan using the bottom of a spoon or your hands to compact the crumbs and even them out. Bake at 350F degrees for 8 to 10 minutes. Allow to cool before adding filling.
-Filling: In a high speed blender, combine the coconut cream, vegan cream cheese, lemon zest, lemon juice, sugar free maple syrup and salt until smooth and combined. Pour the filling over the crust then spread onto graham cracker crust and to the edges. Freeze overnight then thaw at room temperature 20 minutes, top with nondairy whipped topping and lemon zest. Serve and enjoy!
