Delicious Lasagna in a Skillet

My Delicious Lasagna in a Skillet is a quick and easy way to make a delicious dinner.  Some of my key ingredients included plant based meat, gluten free lasagna, vegan shredded cheese, and a tasty marinara sauce.   In addition to a great spice combination, I also added in some sautéed fresh spinach.  This dish was bold and full of flavor.

Delicious Lasagna in a Skillet


Ingredients:
1 Tablespoon of olive oil
1/2 Cup of chopped onion
2 Cloves of garlic, minced
1 Cup of red bell pepper, chopped
1 Tablespoon of Italian seasoning
1 1/2 Cup of plant based crumbles or another plant based meat of your choice
1/2 Teaspoon of smoked paprika
1/4 Teaspoon of red pepper flakes
1-2 Teaspoon of balsamic vinegar
1/4 Teaspoon of Himalayan salt
18 oz. Jar of marinara sauce of pasta sauce
6-8 Regular lasagna noodles, broken in half and add to boiling water and cook according to directions on packaging.
1 Cup of vegan shredded cheese
1 Cup of chopped spinach

Directions
-Break lasagna noodles and add them to the pot. Cook noodles according directions on packaging.
-Heat a small skillet and add chopped spinach with 1 tablespoon of olive oil until wilted. Set aside.
-Heat a large cast iron skillet over medium heat and add olive oil, garlic and sauté until the onion is translucent then add the spices, plant based crumbles, balsamic vinegar, Himalayan salt and combine well.
-Then cook until the crumbles are golden on the edges for 3 to 5 minutes. Then remove half of the crumbles from the skillet, to add in later. -Add the cooked lasagna noodles, then add marinara sauce. Cook for 2 minutes to heat through. Then add the remaining plant based crumbles and top with vegan cheese. Cover and cook for another 2-4 minutes, or until the cheese is melted. Garnish with red pepper flakes and fresh basil. Enjoy!!
