Delicious Gyros

Delicious Gyros are tangy and tasty, made with sauteed mushrooms, sliced cucumbers, vegan feta cheese and a creamy Tzatziki sauce.  They have a tasty, authentic Greek flavor.

 


 

Delicious Gyros

Vegan Gyro Meat Ingredients:
16 oz. package of mushrooms, sliced
1 ½ teaspoon of olive oil
1 clove of garlic, minced
½ white onion, chopped
¼ cup of water
1 tablespoon of tomato paste
3 tablespoons of low sodium soy sauce
1 teaspoon of Italian seasoning
1 teaspoon of smoked paprika
1/8 teaspoon of cayenne pepper
1 tablespoon of sugar free maple syrup
1 teaspoon of vinegar

Other Ingredients:
2-4 pitas
1 bunch of romaine lettuce, shredded
1 tomato, sliced
½ cucumber, thinly sliced
2-4 tablespoons of tzatziki sauce
sprinkle of fresh basil, chopped
vegan feta cheese, crumbled

Directions:
-In a cast iron skillet add the olive oil, onions, minced garlic and mushrooms.  Sauté the mushroom mixture for 3-5 minutes.  Then add the seasoning and sauté for 1 minute.
-Add the water, tomato paste, soy sauce, sugar free maple syrup and vinegar, stir to combine.
-Simmer for another few minutes, then warm the pitas for 5 minutes.
-Top the pita bread with tzatziki sauce, shredded lettuce, sliced cucumber, sliced tomato, vegan gyro mixture and crumbled feta cheese.  Top with additional tzatziki sauce and chopped basil, serve and enjoy!
