Curry Chickpea Salad Sandwich

My Curry Chickpea Salad Sandwich is full of flavor and it packs a nice kick.  Some key ingredients include chickpeas, red and green peppers, celery, onion, and a delicious vegan mayo dressing.



Curry Chickpea Salad Sandwich

1 19 oz. can of chickpeas, drained and rinsed
1/2 cup of red bell pepper, diced
1/2 cup of green pepper, diced
1/4 cup of carrots, shredded
1 Serrano pepper, diced
2 medium green onions, chopped
Sourdough Bread
Garnish with basil, chopped
Curry Dressing:
1/4 cup of vegan mayonnaise
1/4 cup plain Greek yogurt
2 teaspoons of lemon juice
1 teaspoon of curry powder
1/2 teaspoon of onion powder
1 teaspoon of Italian seasoning
Sprinkle of Himalayan salt and pepper
-Drain and rinse the chickpeas, transfer the chickpeas to a paper towel then use another paper towel for the top and roll back and forth with your hands to remove the skin.
-In a small bowl, combine the curry dressing ingredients then set side.
-Add chickpeas to a large bowl. Mash with a potato masher or a fork until it appears flaky and well mashed. You can also use a food processor.
-Add the diced green pepper, red pepper, shredded carrot, green onion and Serrano pepper.
-Remove the stem of the Serrano pepper and cut in half. Scrap out the seeds from the center of each half, then chop fine.
-Add to a large bowl the chickpeas and veggies, then season with the curry dressing, mix well. Toast sourdough bread if desired then, on a serving plate add sourdough bread, artisan lettuce, chickpea salad and sliced tomato. Slice, serve and enjoy!
