Crunchy Roasted Vegetable Pita with Hummus

Try making this Crunchy Roasted Vegetable Pita with Hummus for lunch.  It’s a delicious, roasted vegetable assortment served in a warm pita with a spread of tasty hummus.  Delicious and nutritious!



Crunchy Roasted Vegetable Pita with Hummus

1 can of chickpeas, rinsed and drained
1 tablespoon of olive oil
½ teaspoon of smoked paprika
½ teaspoon of onion powder
1 teaspoon of Italian seasoning
¼ teaspoon of chili powder
¼ teaspoon of pepper
1 cup of cherry tomatoes, halved
½ red onion, diced
1 zucchini, quartered
6 gluten free pitas
½ cup of plain hummus, (you can also add 1 teaspoon of everything bagel seasoning if desired)
1/3 of a head of red leaf lettuce, shredded

-Preheat the oven to 400F degrees.
-Prepare a baking sheet with parchment paper then set aside.
-In a large bowl, add the chickpeas, quartered zucchini, seasoning and olive oil, toss to coat.  Make sure the vegetables are in a single layer.  Bake for 15 to 20 minutes, toss halfway through.  Remove from the oven then set aside to cool a little.
-Prepare a baking sheet with parchment paper then place the pitas on top.  Brush each side lightly with olive oil.  Place pitas in the oven for 5 minutes then flip after 2 minutes.  Remove pitas from the oven and place on a serving plate, spread the hummus on top of the pita, add shredded lettuce and roasted vegetables, tomatoes, diced red onion and vegan feta cheese.  Drizzle your favorite dressing and enjoy!
