Creamy Roasted Red Pepper Feta Dip is spicy and bursting with flavor. This is a smooth and creamy dip that was served with pita chips, but it also goes well with vegetable slices or tortilla chips.
Creamy Roasted Red Pepper Feta Dip
Ingredients:
2 8 oz. blocks of vegan feta cheese, patted dry with paper towels
1-2 tablespoons of
olive oil, plus extra for the top
1 large jar of roasted red peppers
2 cloves of garlic, minced
1/2 teaspoon of smoked paprika
1 pinch of cayenne pepper, or as needed
1/4 teaspoon of ground pepper
Garnish with fresh basil, chopped
Directions:
-Preheat the oven to 390F degrees.
-In a medium size baking dish or sheet pan, add vegan feta cheese then drizzle 1 to 2 tablespoons of olive oil. Sprinkle with smoked paprika, Italian seasoning and cayenne pepper. Rub spices into vegan feta cheese then place in the oven for 20 minutes or until golden.
-Spoon the vegan feta cheese into a food processor, add roasted red peppers, 1 tablespoon of olive oil and minced garlic. Make sure to open the top for the steam to escape and blend until smooth and creamy.
-Pour into a serving bowl and top with a drizzle of olive oil and chopped fresh basil. You can enjoy with pita chips or vegetables. Enjoy!
