Chocolate Walnut Bars

Try these Chocolate Walnut Bars for your next dessert.  They are made with nondairy chocolate, crushed walnuts and Medjool dates.  These bars have a chewy texture to them.



Chocolate Walnut Bars

1 ¾ cup walnuts, chopped for filling
Chocolate Layer:
½ cup of quick oats
¼ cup of packed pitted Medjool dates
1 tablespoon of coconut oil
1 tablespoon of cocoa powder
¼ teaspoon Himalayan salt

Walnut Filling:
1 tablespoon coconut oil
½ cup of packed pitted Medjool dates
1 teaspoon of vanilla extract
¼ teaspoon of Himalayan salt

Chocolate Topping:
3 ½ oz of nondairy dark chocolate
1-2 tablespoons of coconut oil

-Add the oats to the food processor, then pulse into flour, then add dates and pulse into a coarse meal.  Add the coconut oil, cocoa powder and salt. Pulse until well combined.  Transfer the chocolate layer to a square silicone pan then use your hands to press down firmly.  You can also use the back of the spoon to smooth out the top.  Place it in the freezer then prepare the remaining filling.
-Add the walnuts and coconut oil to a food processor then pulse until it becomes a smooth consistency.  Scrape down the sides as needed then add the dates, vanilla extract and Himalayan salt.  Combine until it forms a paste.  Add about 1 tablespoon of the filling to the chocolate layer then use the back of a spoon to press the filling over the base.
-Place the silicone pan in the refrigerator then prepare the chocolate topping.
-In a double boiler over low heat add the nondairy chocolate chips and coconut oil, then mix until smooth and creamy.  Add 1 to 2 tablespoons to each square section then freeze for about 2 hours or overnight.  Lift from the silicone pan and enjoy!
