Chocolate Peppermint Mousse is a decadent and delicious dessert for the holidays. It’s a quick and easy dessert that uses less than five ingredients, including peppermint and nondairy chocolate, and it’s topped off with a scoop of nondairy whipped topping.
Chocolate Peppermint Mousse
Ingredients:
1 tablespoon of coconut oil
2 tablespoons of sugar free maple syrup
1/4 teaspoon of peppermint extract
2-3 tablespoons of cranberry chia sauce
Topping:
Garnish with nondairy whipped topping
Chocolate Shavings
Directions:
-Refrigerate the coconut cream for 4 hours or overnight. Add the coconut cream to a large bowl.
-In a double boiler, add the nondairy chocolate chips and 1 tablespoon of coconut oil. Melt until smooth. If using a microwave, melt in 30 second intervals, for 2-3 minutes, stirring after each interval.
-Pour the melted dark chocolate over the coconut cream. Use a hand held mixer and whip melted chocolate and coconut cream until smooth.
-Add the sugar free maple syrup and peppermint extract. Whip until it forms a mousse like texture.
-Add the chocolate mousse to 2-3 glasses, then layer, the cranberry chia sauce, add another layer of chocolate mousse. Top with nondairy whipped topping and shaved chocolate. Enjoy!
