Chocolate Peanut Butter Oatmeal Bars are chocolate-ty and decadent, and full of protein. I made them using non-dairy chocolate chips and creamy peanut butter. They are great for breakfast.
Chocolate Peanut Butter Oatmeal Bars
Ingredients:
1 Cup of + 1 tablespoon of creamy peanut butter
1/2 Cup of sugar free maple syrup
1 1/2 Cups of rolled oats
Chocolate Topping:
3 Tablespoon of creamy peanut butter
Directions:
-Line a 9 inch square pan with parchment paper or spray a nonstick spray. Set aside.
-In a double boiler add the sugar free maple syrup and creamy peanut butter to a sauce pan over medium heat, stir until combined.
-Then add the rolled oats and mix well. Remove from the heat and add mixture to the the 9 inch inch pan with parchment. Press down to get it leveled and smooth out with the bottom of a measuring cup or spatula. Set aside.
Chocolate Topping:
-In a double boiler, nondairy chocolate chips and peanut butter. Stir until smooth and creamy. Pour melted chocolate over the oat mixture then smooth with a spatula. Cool for a for 10 minutes then refrigerate for 30 minutes. Slice into bars and enjoy!
