Chocolate Covered Almond Butter Dates

Chocolate Covered Almond Butter Dates are a healthy and delicious dessert treat that is full of fiber.  They are also quick and easy to make, you only need three ingredients – nondairy chocolate, almond butter and Medjool dates.

 


 

Chocolate Covered Almond Butter Dates

Ingredients:
¼ cup of creamy almond butter
12 whole dates, pitted
1 tablespoon of coconut oil
Directions:
-Add dates to a wooden cutting board, with a sharp knife cut a small slit across the top of each date from end to end.  Remove the seed then place on a baking sheet with parchment paper.
-Fill each date with a heaping teaspoon of almond butter then return to a baking sheet.  Place the stuffed dates in the freezer for 15 minutes.
-In a double boiler, melt the nondairy chocolate chips and 1 tablespoon of coconut oil, then stir until smooth.  Remove the dates from the freezer, then dip them one at a time into the chocolate coating each one completely.  Place them back on the baking sheet with parchment paper.
-Let the dates sit at room temperature to harden or you can freeze for 5 minutes.  Enjoy!
