Chipotle Hummus

This Chipotle Hummus has a spicy kick and is full of flavor.  It’s quick and easy to make, and tastes great with baked flatbread, tortilla chips or vegetables.

 


Chipotle Hummus

Ingredients:
3 1/2 to 4 Cups of chickpeas, rinsed and drained
3 Tablespoons of tahini
1/2 Cup of lemon juice
2 Cloves of garlic, minced
1 1/2 Chipotle pepper in adobo sauce, add according to taste
Himalayan salt and pepper
1 Teaspoon of smoked paprika
1 Teaspoon of Italian seasoning, optional
Add olive oil or avocado oil, according to the texture
Garnish with fresh basil

Pita Bread:
1 Package of pita bread
2 Garlic cloves, minced
3 to 4 Tablespoons of vegan butter, melted
Sprinkle of Italian seasoning

Directions:
Preheat oven to 400F.
-Rinse and drain the chickpeas, then add to a food processor. Save some of the reserved liquid for later.
-Then add the tahini, lemon juice, chipotle peppers, smoked paprika and garlic. Blend until smooth. You can use some of the liquid or olive oil if necessary.
-Season with Himalayan salt and pepper to taste. Spread hummus on your favorite serving dish then drizzle with olive oil and Italian seasoning or chopped basil.
-In a small sauce pan add the vegan butter, Italian seasoning and minced garlic until melted.
-Then brush pita bread with butter mixture on a baking sheet with parchment paper. Bake for 20 minutes. Remove from oven, cut bread and serve with hummus. Enjoy!
