Chipotle Black Bean Dip

Try this delicious Chipotle Black Bean Dip while watching the big game or your favorite movie.  It’s full of flavor and packs a spicy kick.  Serve it with tortilla chips or fresh vegetable slices.



Chipotle Black Bean Dip

2-3 chipotle chili peppers, in the can
2 teaspoons of adobo sauce, or according to taste
2 1/2 cups of black beans, rinsed and drained
1/4 teaspoon of smoked paprika
1 garlic clove, minced
1/2 cup of cilantro or to taste
1 lime juiced, add additional lime juice as needed
2 1/4 tablespoon of olive oil
Handful of cilantro
1 Roma tomato, diced to garnish
1 Serrano pepper, sliced
-Preheat oven to 400F.
-Rinse and dry black beans then add to a baking sheet with parchment paper. Bake in the oven for 15 minutes. Remove from the oven and add beans to a food processor along with chili peppers, adobe sauce, lime juice, olive olive, garlic and cilantro. Then process 1-2 minutes until smooth. Adjust thickness with more lime juice to taste or water if needed. Serve with chips, lime wedges and top with diced tomatoes and sliced Serrano pepper. Enjoy!
