Chickpea Pasta with Sun-dried Tomatoes

This Chickpea Pasta with Sun-dried Tomatoes is delicious and full of flavor.  Some key ingredients include chickpea pasta, plant based sausage, sun-dried tomatoes and marinara sauce.



Chickpea Pasta with Sun-dried Tomatoes

10 oz. package of chickpea pasta
1 -2 tablespoon of olive oil
8 oz. of mushrooms, sliced
15 oz. plant based sausage, mild and sliced
1 7.5 oz. jar of sun-dried tomatoes, sliced
2 cloves of garlic, minced
1/2 teaspoon of Italian seasoning
Sprinkle of red pepper flakes
13 oz. jar of marinara sauce
6 oz. of fresh spinach, or as desired
Himalayan salt and pepper
-In a large pot of water, add chickpea pasta and bring to a boil. Cook the pasta according to directions on packaging.
-Prepare plant based sausage according to directions on packaging and cook in a cast iron skillet or pan.
-While the pasta is cooking, in a large cast iron pan add garlic and sliced mushrooms, sauté for 5 minutes then add the the fresh spinach until spinach wilts and mushrooms are cooked through. Add the Italian seasoning, red pepper flakes and marinara sauce.
-Combine ingredients then add cooked and drained pasta, sun-dried tomatoes and sliced plant based sausage to the sauce. Add additional seasoning, to taste.
-Simmer and combine everything together on medium heat stirring frequently, for 5 minutes. Remove from heat. Serve and enjoy!
