This is a delicious Caramelized Onion Hummus that makes for a great appetizer or snack. In addition to chick peas and caramelized onions, I added some organic tahini, fresh squeezed lemon juice, garlic, and some special seasonings. The hummus was smooth and tasty, with a slight kick to it.

Caramelized Onion Hummus
Ingredients:
1-2 Tablespoons of olive oil
1 Medium yellow onion, peeled and sliced
1 15 oz. can of chickpeas, drained and rinsed
3 Tablespoons of tahini
1-2 Cloves of garlic, peeled
1 Tablespoon of Italian seasoning
1/4 Cup of fresh lemon juice, 1 lemon
1 Teaspoon of Himalayan salt
1/2 Teaspoon of pepper
Dash of black pepper
2 Tablespoons of water as needed for desired consistency
Directions:
-Heat the olive oil in a skillet over medium heat. Then add the sliced onions to the skillet and cook for about 20-25 minutes sauté every couple of minutes.
-Once the onion slices are caramelized and cooled add the onions and hummus ingredients, except water to the food processor bowl. You can also save a small amount of chopped onions for garnishing the hummus. Process the ingredients until smooth. If it’s not smooth enough add a little water until desired consistency. Transfer to a serving bowl and serve with pita chips or raw vegetables. Enjoy!
