Caramel Chocolate Covered Banana Bites

These Caramel Chocolate Covered Banana Bites are a healthy snack that is full of potassium and protein.  They have a banana and peanut butter filling that’s covered in delicious nondairy chocolate.

 


 

Caramel Chocolate Covered Banana Bites

Ingredients:
2 bananas, sliced
3 tablespoons of creamy peanut butter
1 tablespoon of coconut oil
Directions:
-Prepare a small square mold silicone pan.
-Peel and slice bananas into approximately 1/2 inch rounds and set aside.
-In a double boiler, add nondairy chocolate chips and 1 tablespoon of coconut oil. Stir until smooth. Then add 1 tablespoon of melted chocolate to the bottom of each square mold.
-Freeze for 5 minutes until hardened.
-Add the banana slices to each square mold in the silicone pan. Then add a dollop of peanut butter on top of each banana slice.
-Place silicone mold in the freezer for 10 minutes.
-Heat chocolate again, and drizzle the remaining melted chocolate over the top of each square silicone mold. (You can make an additional 1 cup of nondairy chocolate with 1 tablespoon of coconut oil, as needed for the top).
-Place the bananas in the refrigerator to set the chocolate and chill in the freezer for at least 20 minutes until the chocolate sets. You can also put them in the freezer. Enjoy!
