This Caprese Brown Rice Pasta Salad is full of flavor and a great salad to take to a cookout. It’s made from plant based pasta, vegan pepperoni, grape tomatoes, green peppers and vegan feta cheese to name a few ingredients. I topped the salad with a fresh and delicious vinaigrette dressing and then drizzled it with some balsamic glaze.
Caprese Brown Rice Pasta Salad
Ingredients:
1 1/2 cups of dry brown rice bow tie pasta
1 1/2 cup of cherry tomatoes, sliced
1/2 green pepper, chopped, optional
1/2 cup of vegan feta cheese, crumbled or as desired
Garnish with basil, chopped
Dressing:
1/2 cup extra virgin olive oil
1/4 cup of red wine vinegar
2 tablespoon of lemon juice
2 teaspoons of Dijon mustard
1 clove of garlic, minced
1/2 teaspoon of Italian seasoning
1/4 teaspoon of Himalayan salt
Directions:
-In a large pot boil water then add pasta to pot according to directions on packaging. Drain in colander and rinse lightly with cold water. Set aside to drain and cool down.
-Slice cherry tomatoes in half and set aside. In a large bowl add brown rice pasta, sliced tomatoes, vegan feta cheese, plant based pepperoni and green pepper.
-In small a bowl, add dressing ingredients and whisk until combined. Set aside.
-Drizzle dressing over pasta salad and combine well. Toss to coat and taste for seasoning.
-Prepare to serve and garnish with chopped basil. Enjoy!
