Cajun Roasted Cauliflower Steaks

I made Cajun Roasted Cauliflower Steaks for dinner tonight.  They were delicious and spicy.  They were also crunchy and healthy.  Two key ingredients included bread crumbs and cauliflower sliced to look like steak.  This is a new recipe that I tested a few times, and it came out great.

Cajun Roasted Cauliflower Steaks

Ingredients:
Cajun Cauliflower
1 Small head of cauliflower, slices into 1/2 inch thick slices or chopped into medium size florets
2 Tablespoons of Cajun spice
2 Teaspoons of smoked paprika
1/2 Teaspoon of black pepper
1/2 Teaspoon of onion powder
1 Tablespoon of Italian seasoning
1/4 Teaspoon of Himalayan salt, if desired
1 Teaspoon of lemon juice
2 Tablespoons of panko bread crumbs, (optional )
2 Tablespoons of olive oil
Garnish with basil

Tahini Sauce
1/4 Cup of tahini
2 1/2 Tablespoons of water
1 1/2 Teaspoons of honey
1 Tablespoon of lemon juice
1/2 Garlic clove, minced
1/4 Teaspoon of salt and pepper

Directions:
-Mix tahini sauce ingredients together in a medium size bowl and set aside.
-Slice the cauliflower or chop into florets. Line a baking tray with parchment paper. Preheat the oven to 425F degrees / 220C.
-Rub the olive oil and lemon juice all over the slices or florets. Sprinkle the cajun spice, other spice ingredients and two tablespoons of panko bread crumbs in a bowl then add to both sides and rub lightly. Toss to coat.
-Spray oil lightly on the spiced cauliflower to seal the spices in. Bake at 425F degrees for 20 to 25 minutes. Broil for a minute to seat if needed.
-Cauliflower tends to soften depending on the moisture content after cooking. Sprinkle with more spices if needed and drizzle with a tahini sauce, serve immediately!
