Cabbage & Quinoa Superfood Salad

A Cabbage & Quinoa Superfood Salad is a tasty lunch dish that has nutrient dense whole food ingredients like quinoa, fresh spinach and chopped cabbage.  This dish has beneficial ingredients that are high in fiber, antioxidants, vitamins and minerals.

 


 

Cabbage & Quinoa Superfood Salad

Ingredients:
small wedge of red cabbage, shredded thinly or you can purchase cabbage already shredded
2 cups of baby spinach, rinsed and stems removed
½ cup of dried quinoa
½ cup of frozen peas
½ zucchini, quartered
½ cup of cherry tomatoes, halved
½ cucumber, sliced thin
1 green onion, sliced thinly
¼ cup of green olives, sliced thinly
garnish with fresh basil, chopped
Greek Salad Dressing:
1/2 cup of olive oil
1/4 cup of red wine vinegar
2 tablespoons of lemon juice
1 garlic clove, minced
1/2 teaspoons of Italian seasoning
1/4 teaspoon of Himalayan salt
1/4 teaspoon of black pepper
Directions:
-In a small bowl, add dressing ingredients then whisk together until combined, set aside.
-Rinse quinoa and place in a small pot with a lid.  Cook according to directions on packaging.  Once it’s finished cooking, let the quinoa cool down before adding to the salad.
-Add the frozen peas to a steamer over boiling water and cook for about 1 minute, then drain immediately and set aside to cool.
-Prepare the vegetables – in a large bowl, add the zucchini, cherry tomatoes, cucumbers, green onions, then add the quinoa and steamed peas.  Drizzle the dressing over the salad and toss to combine. Garnish with fresh chopped basil. Enjoy!
