Brownie Sundaes

Brownie Sundaes are decadent, moist and delicious.  They are chocolate-ty brownies that are topped with nondairy vanilla ice cream and drizzled melted chocolate.

 


 

Brownie Sundaes

Ingredients:
½ cup of coconut oil plus 1 tablespoon, melted
1 teaspoon of vanilla extract
2 egg replacers or ground flax eggs (2 tablespoons of ground flax mixed with 5 tablespoons of water)
¾ teaspoon of baking powder
¾ cup of coconut sugar
½ teaspoon of xanthan gum (omit if your gluten free flour has this in it)
¼ teaspoon of Himalayan salt
½ cup of cacao powder
½ cup of unsweetened almond milk

Directions:
-Preheat oven to 350F. degrees.
-Grease a muffin pan with non-stick cooking spray or you can use a round silicone baking pan.
-Prepare egg replacers or flax eggs according to directions on packaging.
-Pour the melted coconut oil in a large bowl, then add the flax eggs, coconut sugar, vanilla extract, baking powder, Himalayan salt, almond milk and cacao powder. Use a handheld mixer to combine ingredients well.
-Add the flour slowly and mix until combined.
-Scoop the batter evenly into an 8-9 inch silicone cupcake pan or muffin tin.  Bake for 15 minutes.
-Remove the silicone tray from the oven and press a bottomed glass into each muffin until it creates a well in the center of each muffin.
-Place back in the oven for 2-3 minutes until the muffins are done and a toothpick inserted in the center comes out clean.
-Remove the brownies from the oven to cool for about 5 minutes, then remove the brownies from the silicone tray and transfer to a wire rack for about 10 minutes.
-Once your brownies are cooled add your favorite nondairy ice cream and drizzle melted chocolate.  Enjoy!
