Blueberry Chia Pudding

This Blueberry Chia Pudding is a quick and easy breakfast that provides some great health benefits.  Chia seeds are an excellent source of Omega 3 fatty acids as well as fiber, which makes them very healthy.  You only need six simple ingredients.

 


 

Blueberry Chia Pudding

Ingredients:
3 Tablespoons of chia seeds
1 tablespoon of sugar free maple syrup
1 Teaspoon of vanilla extract
Layer:
Nondairy coconut yogurt:
Blueberry Sauce Topping:
1 Cup of blueberries, frozen
1 Teaspoon of coconut sugar
2 tablespoons of water
Directions:
-In a medium size bowl, combine the chia seeds, unsweetened almond milk, sugar free maple syrup and vanilla extract. Set aside.
-Prepare the blueberry sauce in a cast iron skillet. Add the frozen blueberries, water and coconut sugar to the pan, and cook on medium for about 10 minutes, stirring letting the blueberries cook down. Then you can use a potato masher to crush the blueberries. You can also use an immersion blender to blend the sauce until it thickens.
-Remove the saucepan from the stove allow to cool completely.
-Make sure the chia pudding is thick, then in a small glass or jar add in a layer of the chia pudding then a layer of nondairy coconut yogurt. Top with the blueberry sauce. Enjoy!
