Banana Peanut Butter Klondike Bars are a decadent and delicious dessert treat.  They are full of potassium and protein, they are crunchy and they taste great.



Banana Peanut Butter Klondike Bars

Nondairy Ice Cream
 2 bananas, cut and frozen
2 tablespoons of peanut butter, plus more for swirling
Chocolate Shell Topping:
1/4 cup of brown rice crisps
1-2 Tablespoon of coconut oil
-Slice bananas and freeze overnight in a sip lock bag.
-Prepare square silicone pan then Set aside.
-Nondairy ice cream: Add the peanut butter and frozen bananas to a food processor or blender, blend until creamy.
-Use a 1-inch cookie scooper and divide mixture into each square silicone section. Add 1-2 teaspoons of peanut butter to each square section and swirl. Freeze until solid, or overnight.
-In a double boiler, melt the nondairy chocolate chips and coconut oil, stir until smooth and creamy, then add the brown rice crisps. Mix until combined.
-Remove the square silicone tray from the freezer, then dip each nondairy ice cream bar into the melted chocolate and place on a baking sheet with parchment paper.
-Place in the freezer for 10 minutes or until the chocolate has hardened.
-Place in a freezer-safe container or bag and store until served. Enjoy!
