Banana Cake with Chocolate Frosting

Banana Cake with Chocolate Frosting is a moist and decadent dessert.  This cake is full of potassium, and it has a delicious, nondairy chocolate frosting.

 


 

Banana Cake with Chocolate Frosting

Ingredients:
3 cups of gluten-free flour
1/2 cup of vegan butter
1/2 teaspoon of baking soda
3 teaspoons of baking powder
2 teaspoons of cinnamon
1/4 teaspoon of ground nutmeg
1/2 teaspoon of ground ginger, optional
3/4 cup of of coconut sugar
1/2 cup of organic sugar
1/4 teaspoon of Himalayan salt
1 1/2 tablespoon of dairy free yogurt, room temperature
1 cup of soy milk or almond milk
2 bananas, mashed
1 1/2 tablespoons of vanilla extract
1 tablespoon of apple cider vinegar
Directions:
-Preheat the oven to 350F. Then grease a 9 by 9 inch pan or you can line a pan with parchment paper.
-To make homemade buttermilk, in a medium bowl, add 1 cup of soy or almond milk along with 1 tablespoon of apple cider vinegar. Whisk together then set aside to curdle for 5 minutes.
-In a large mixing bowl, use a hand held mixer then mix the vegan butter, mashed banana, coconut sugar, dairy free yogurt, organic sugar and vanilla extract. Combine ingredients.
-Add in the gluten-free flour, baking powder, baking soda, cinnamon, nutmeg, ginger, optional, Himalayan salt and vegan buttermilk. Combine ingredients.
-Then add the batter into the prepared 9 by 9 inch baking pan to bake for 35 to 40 minutes.
-Remove the cake from the oven to cool for about 20 minutes on a cooling rack.
-Frost with a delicious chocolate frosting and enjoy!
