Apple Cinnamon Overnight Oats

My Apple Cinnamon Overnight Oats is great for breakfast.  It’s a nutritious breakfast meal that’s full of healthy fiber, and it can jump start your day.

 


 

Apple Cinnamon Overnight Oats

1 1/3 cup of nondairy almond milk
2/3 cup of plain Greek yogurt
1/2 teaspoon of vanilla extract
I/2 teaspoon of ground cinnamon
2 tablespoons of coconut sugar
2 tablespoons of chia seeds
1 cup of rolled oats
Apple Compote:
1 tablespoon of vegan butter
1-2 medium apples, peeled, cored and diced
1/2 teaspoon of ground cinnamon
2 tablespoons of sugar free maple syrup
1 tablespoon of water
1 teaspoon of corn starch
Directions:
-In a large bowl, mix together the liquids then add the other ingredients. Mix until combined.
-Portion the oats into small glasses or jars. Cover with plastic wrap or a lid for the jars. Refrigerate overnight.
-Add the vegan butter, apples, cinnamon and sugar free maple syrup to a medium size pan. Mix over medium heat for 3 to 5 minutes until the apples are fork tender. Mix the water and cornstarch together in a small bowl then add to the pan. Combine ingredients and continue to cook for another 1-2 minutes until the mixture thickens. Remove from the heat and cool.
-Remove the oats from the refrigerator and top with apple compote. Serve and enjoy!
