I made this delicious cereal for breakfast recently. The almonds are packed with antioxidants and vitamins. Besides being great for breakfast, this cereal is really healthy. The recipe is listed below:
Ingredients:
1/2 Cup of sugar free maple syrup
1/4 Cup organic almond butter
1 Teaspoon of vanilla extract
1 Teaspoon of cinnamon
1/2 Teaspoon of Himalayan salt
1 1/2 Cups of rolled oats
1/2 Cup of almonds, unsalted and coarsely chopped
1 Cup of dried cranberries
Sprinkle of fresh blueberries (optional)
Directions:
-Preheat your oven to 325F and line a baking sheet with parchment paper.
-In a medium bowl, whisk together the sugar free maple syrup, almond butter, vanilla extract, cinnamon and Himalayan salt.
-In a large bowl, mix the rolled oats, and almonds. Then add the maple syrup mixture to the bowl and stir until combined and coated well.
-Spread the mixture out evenly onto a baking sheet with parchment paper. Bake for 20 to 25 minutes, stirring the mixture at the 10 minute mark. The granola is done when the oats are golden brown and when the almonds are toasted. Watch it to make sure it doesn’t burn.
-Remove the granola from the oven and combine in the dried cranberries. The granola will be soft, it will crisp as it cools. Allow it to cool then add blueberries. Enjoy!
