Vegetable Chow Mein Stir Fry

Vegetable Chow Mein Stir Fry is a go to recipe that has a spicy kick to it.  It’s made from a mixture of colorful vegetables sautéed in a savory stir fry sauce with garlic and ginger.  And it’s a great meal prep dish.

 


 

Vegetable Chow Mein

Ingredients:
10 ounces of Udon Rice Noodles, gluten free
1 tablespoon of olive oil
1 yellow onion, chopped
1 red bell pepper, sliced thin
1 cup of snow peas
2 cups of purple cabbage, thinly sliced
Garnish with fresh basil, chopped
2 green onions, chopped, optional
½ cup of soy sauce
1 teaspoon of Sriracha sauce
1 clove of garlic, minced
2 teaspoons of fresh ginger, grated
2 teaspoon of sesame oil
Directions:
-Prepare the noodles according to the directions on the packaging.
-In a small bowl, whisk together the soy sauce, sriracha sauce, garlic, fresh ginger and sesame oil.  Set aside.
-In a wok or large skillet over medium heat add 1 tablespoon of olive oil.  Then add onion, garlic, red pepper, snow peas and purple cabbage.  Cook for 5 minutes, then saute’ until vegetables start to soften.
-Add cooked and drained noodles and sauce to the wok and cook for 4 minutes.
-Add noodles to a serving plate and top with sesame seeds and sliced green onions.
