For your next dessert try making these No Bake Strawberry Nondairy Cheesecake Cups. They have a delicious graham cracker crust and a flavorful filling of fresh strawberries and coconut cream. This dessert is creamy and full of flavor.
No Bake Strawberry Nondairy Cheesecake Cups
Ingredients:
Strawberry Filling:
1 15 oz. can of coconut cream
3/4 cup of organic sugar
2 cups of fresh strawberries, divided
Graham Cracker Crust:
1 1/2 cups of graham cracker crumbs, about 10 sheets
1/2 cup of coconut sugar
1/3 cup of coconut oil
Directions:
-Graham Cracker Crust – crush graham crackers, about 8 to 10 sheets of crackers in a food processor or you can use a zip lock bag and crush them with a rolling pin.
-In a large bowl add the graham cracker crumbs , coconut oil and coconut sugar. Then stir until combined. Press mixture into each silicone round pan then using the bottom of the measuring cup to further even out the crust.
-Freeze for 15 minutes, then make filling.
-In a blender add the coconut cream, vegan cream cheese, organic sugar and 1 cup of chopped strawberries. Blend ingredients until combined.
-Pour the mixture into each silicone mold on top of the crust. Put into the freezer for 10 minutes. Then remove the silicone pan and top with chopped strawberries. Cover overnight and freeze.
-Remove from freezer and let it soften for 10 minutes. Serve and enjoy!
