This Vegan Pasta Salad is great for the spring and summer, as well as a family cookout. It’s full of fresh vegetables like red and green peppers, red onion, zucchini, cherry tomatoes, and artichoke hearts. I also used vegan quinoa pasta, and a flavorful assortment of spices. Vegan Pasta Salad
Ingredients:
1 Box of Quinoa Pasta, Andean dream
2 Zucchini’s cut in small chunks
1 Pint of cherry tomatoes, halved
1 Green bell pepper, chopped
1 Red bell pepper, chopped
1/2 Cup of artichokes, chopped
1 Cup of vegan shredded cheese
1/2 Cup of red onion, chopped
1 Tablespoon of Italian seasoning
Dressing:
1 Teaspoon of Italian seasoning
1/3 Cup of red wine vinegar
1 Teaspoon of Dijon mustard
1 Tablespoon of olive oil
1 Clove of garlic, optional
1 Teaspoon of honey
Directions:
In a large bowl, combine the zucchini, quinoa pasta, tomatoes, bell peppers, vegan cheese, onion and artichokes. Add seasoning and toss to combine. Enjoy!
